a new creation

In my now mid-twenties, I have finally taken up cooking (for real this time-As in, branching out from french toast, spaghetti...etc.) I've been easing myself in for the past year. However, as of late, I've been cooking more regularly and being more creative. If I do say so myself, I am getting good at it, and I really like it. I feel like I have a good knowledge of what flavors taste good together, and I can whip things together with less anxiety and more confidence...
Here's a recipe that I spontaneously created today for lunch...
It was super delicious, but don't get too excited, it was also probably super fattening. Who cares.

Let's call it a Chipotle Ranch Chicken Wrap

Here's how to do it.
Cover your skillet in olive oil. Get it nice n hot around 7 on the dial.
Fry up some cubed potatoes till crispy
Add a breast of cubed chicken and turn the heat down to 5 or medium-ish.
When the chicken is pretty much cooked through add cut up mushrooms
When the mushrooms are looking good, add a big handful of Arugula
When the Arugula is wilted it's ready to put in your wrap.

Note: As you're cooking, don't worry about the potatoes, the crispier they are the better, watch your chicken though so it doesn't get too dry. You'll wanna add your vegetable ingredients right at the end as your chicken is nearly ready b/c the veggies don't take long to cook.

Dump contents onto a lime and habanero flavored tortilla that has ranch and chipotle sauce smeared all over it... Roll it up and heartily consume. Delish.


Taa DAh!!!



Next time, when I'm making this for Clint, I'll probably add cheese and siracha sauce (since he can't eat practically anything without cheese and I can't eat practically anything without siracha).... I've decided that this is part of the fun of cooking; making something good and figuring out how to tweak it for next time to make it better or different... You could even forgo the wrap and just make it a salad with the ranch/chipotle sauce as a dressing.


If you haven't introduced your palate to this miracle condiment, now is the time.
It literally goes on anything savory.

CVA

Hellllew dear friends! Tis been quite a while since I let you in on the goings on of my life...

It's 11 am. I just got out of my child psychology class (yay, love it). I have 3 hours till my Calculus class...The sun is shining and I am looking forward to 3 o clock. The boyfriend and I are going to play 18 holes of Frolf and watch 2 episodes of Lost before the guests arrive.

Tonight I'm hosting couple's game night a mi casa and it's going to be so much fun! I have such a diverse group of friends, and nothing warms my heart more than having them all in the same place so I can enjoy them simultaneously. It's a good thing.

So, I am graduating in the Spring...uh in like 3 weeks... Believe that I am getting sentimental. Actually, the truth is, I have never been that excited about graduating. I would be content to stay in school the rest of my life. The only reason why I'm mildly excited now is b/c I have something to show for the last 5 years. A piece of paper that says I know a bit of biology, chemistry and spanish. woot....

So, I am in this Comparative Vertebrate Anatomy class. It consumes the bulk of my time-hence the lack of anything else interesting to blog about. Lately, as I mentioned, I've been getting sentimental about school, particularly this class. My friends in lab are hilarious, and I'm going to miss them! (Nerd alert) A few of them have been classmates of mine for years! So, yesterday, I dusted off the camera and brought it to lab.

Sergio and Patrick. These guys sit across from me and they are so funny and adorable. Good guys. Sergio is going on to be a doctor and Patrick a dentist.


I think that Fizza and Omar are the cutest, cutest couple on the planet and I love, love, love them! These two have been friends of mine for years and I'm going to miss seeing them on a daily basis. They're always together, so the rest of us call them Om-izza, or Fomar. It makes me laugh. Fizza is going on to be a dentist and Omar is going to be a doctor...

This isn't that gross of a picture, right? We're studying the cardiovascular system this week. There's the lil heart! (oh and in case you're confused, these animals' blood vessels are injected with colored latex so we can identify them, their veins really aren't blue!)


This is John. He is so sweet, I adore him! He reminds me of my lil brother Joel :) He's going on to be a doctor, although we're all trying to convince him to go to Vet school.


Phil and Kendall, my partners...oh the fun we have... Kendall is going to Optometry school and Phil, medical school.

Last night, we had to do a group project/skit for the lecture portion of this class. We are discussing whether or not a particular extinct animal should be classified as a reptile or a mammal.
Here we are after filming was over...what weirdos...seriously.
